Spinach and cheese rolls

Ingredients :

2 x Empire Pastry Butter Puff Pastry Sheets, defrosted

250g Frozen Spinach, defrosted, squeezed of liquid

1 Egg + 1 Egg for egg wash

1/2 Cup Ricotta

1/2 Cup Goats Curd

1/2 Cup Feta

1/2 Cup Mozzarella (grated)

Pepper and Salt to taste

1/4 Tsp Nutmeg, freshly grated

Sesame Seeds

Method :

Step 1: Pre-heat oven to 220°C

Step 2: In a large bowl, mix the spinach and cheeses well, add one egg, season to taste with salt, pepper and nutmeg.

Step 3: Unroll the puff pastry and cut each sheet in half, lay mix onto each half, brush edges with egg wash and fold to seal.

Step 4:Brush the rolls with the egg wash and sprinkle with sesame seeds.

Step 5: Cut the rolls into desired sizes, place onto try and bake for 10 mins, reduce oven to 180°C and bake for a further 25 minutes, until golden.
